Veggie Type: Leafy Green
Season: Most of the year (depending on how harsh your winters are)
Peak months: September-November
Uses: Curly kale is only superficially different from regular kale, and they can be prepared the same. Discard the stems and eat raw or cooked, but keep in mind that kale develops a bitter taste when cooked. To avoid unwanted bitterness, you can try blanching your greens. Alternatively, you can embrace the bitterness by adding kale to a milder dish, like a frittata, to give your meal an edge!
