Veggie Type: Greens, Stems
Season: Late Spring-Early Summer
Peak months: June-July
Uses: Garlic scapes bring the distinctive flavor of garlic into a more versatile form. The stems can be sliced into thin rounds and eaten raw, much like a garlic-y spring onion, or they can be added to a stir fry in place of garlic. They also taste great pickled, grilled, or roasted. Be warned, the flavor is milder than garlic and can die away if the scapes are overcooked.
