Uses: Broccoli is America’s favorite vegetable for a reason! It’s often steamed, but it can also be eaten raw, and it tastes amazing roasted or pan-fried. Try roasting it with other veggies and pairing with curried chickpeas, tahini, and your grain of choice. When butchering broccoli, the leaves should be disposed of, but the stalk should not! Broccoli has more to offer than just its florets. The outer skin of the stalk doesn’t necessarily need to be disposed of unless it bothers you. When cooked, it won’t make much of a difference whether you peeled the stalk or not.
