Uses: Winter squashes can be difficult to cut. Make sure your squash is stabilized while you’re cutting it in half lengthwise and then scoop out the seeds. Like acorn squash, butternut squash can be roasted halved, with the skins on, and the middle makes a nice well for butter and brown sugar. You can also remove the skin and dice before roasting. Blend butternut squash into a creamy soup or dice it and add it to soups or stews.
