Uses: Cauliflower is a super underrated meaty vegetable that metaphorically blossoms when cooked. While it may be the runt of the litter on a veggie platter, it really shines in a vegetarian curry or cheesy pasta dish. Try it roasted with other winter vegetables and topped with tahini!
