Uses: While the pictures above look pretty different, they’re actually both pictures of red cabbage! The second shows red cabbage more or less as it looks in the ground, but a cabbage very much like the first one is hidden beneath the tough outer leaves. Red cabbage is more nutritious than green cabbage, and it looks absolutely beautiful. It makes a tasty coleslaw for eating alone or adding to tacos. Alternatively, try it pickled for a bright purple variation on kimchi or sauerkraut!
