Uses: While mustard greens can be eaten raw or cooked, they are primarily known as cooking greens. They pack quite a punch when they’re raw, but cooking mustard greens takes some of the edge off the bitter flavor. Try sautéing them and serving on the side of something that provides contrast to the zest (think mac ‘n cheese, beans and rice, cornbread, eggs…). Alternatively, work the mustard greens into one of these milder recipes (e.g. frittata, cheesy casserole, tofu scramble)!
