Uses: Purple potatoes are loaded with antioxidants and taste nearly identical to other potatoes, making them a healthy and colorful alternative. To identify your potatoes, remember that purple potatoes have purple skin and flesh, unlike red potatoes, which have red skin and white flesh. They can be prepared much like red potatoes however, so try them boiled, roasted, or sautéed. Be warned that not all potatoes hold up well to boiling, so boil a sample batch first to make sure you like how they turn out. Like all potatoes, the skins are edible and nutritious. There’s no real reason to discard the skins.
