Uses: Aesthetically speaking, celeriac is one of the funkier veggies out there, but it’s great to have around while you’re waiting for spring/summer veggies to hit the shelves. Cut off the exterior to reveal a firm, white root that makes a surprisingly good raw snack. Try slicing it into sticks and dipping in a salad dressing of choice! When cooked, celeriac has a similar texture to potatoes and can be used as a healthy substitute in most recipes. (Think fries, chips, and “mashed potatoes”!)
