Uses: Yes, celeriac (a.k.a. celery root) is a pretty homely looking veggie, but it is really useful to have on hand, especially in the winter. Cut off the exterior to reveal a white root that can be eaten cooked or raw. It is particularly useful in cooked dishes as it imparts a wonderful flavor and adds depth to broths. When you are lucky enough to get one in the winter, dice it up and freeze it and plan to use it as you would celery in casseroles, rice dishes, and soups. You will find it makes any soup better.
