Veggie Type: Gourd, winter squash
Season: Harvested late summer-fall and stored through the winter
Peak months: August-October
Uses: Much like acorn or butternut squash, the skin of spaghetti squash is very thick and difficult to cut. Most of the time, your best option will be to halve the squash and cook it before removing the rind. Once cooked, you can scoop out the unusually-textured insides for a nutritious alternative to pasta. Try your spaghetti-squash noodles with a tomato sauce or pesto, or just add butter, parmesan, and light seasoning to let its natural flavor shine through.
