Uses: Beets are more versatile than you might think. When properly stored in a cool basement or in a vegetable drawer, they can last weeks or even months. Eat them steamed, roasted, or raw. Peeling is optional. Beet greens are edible also and can be used in soups and stews. Roast beets on their own or with other root vegetables. When eating them raw, thinly slice or shred them and toss them in salads, wraps, or sandwiches.
