Uses: Broccoli is America’s favorite vegetable for a reason. It’s often steamed, but it can also be eaten raw and is great roasted or pan-fried. Try roasting it with other veggies and pairing it with curried chickpeas, tahini, and your grain of choice. When butchering broccoli, the leaves should be disposed of, but the stalk is edible. Just cut away the thickest part of the base of the stalk. The outer skin of the stalk doesn’t need to be disposed of unless it bothers you. When cooked, it won’t make much of a difference whether you peeled the stalk or not.
