Uses: Carrots are a great staple veggie to keep in your fridge year-round. They last for a long time and are extremely versatile. Enjoy them raw with hummus, dips, sandwiches, and salads, or cook them in soups, stir-fries, curries, tofu scramble, etc. If you want to speed up their cooking time, you can steam them lightly before adding them to your dish. Don’t overdo it though because the carrot’s crunch is one of its best features. Use fresh, carrot tops as you would parsley.
