Season: Generally found year-round (grown in the summer-fall and stored through the winter)

Peak months: Harvested June-November

Uses: Chioggia beets’ beautiful cross-section shows a pink and white bulls-eye emanating from the core. This distinctive pattern will fade when cooked, so chioggia beets are often eaten raw. Try them raw on an open-faced sandwich or baked to make chioggia beet chips! (The pink will fade a bit in the oven, but the stripes should still be visible.)
