Uses: Delicata squash is best in the late summer to early fall. Also called peanut or bohemian squash, delicata is sweet and creamy, similar to sweet potatoes and butternut squash.  Can you eat delicata squash skin? Yes, absolutely! To prepare delicata: wash it, cut off the ends, cut in half lengthwise, scoop out the seeds and slice the squash into 1/4” half-moon pieces. Then, roast, bake, steam, grill, or sauté. When roasted with olive oil, delicata squash can be served with a dipping sauce like sweet potato fries.

Delicata squash has a shorter storage life than other squash. Store in a dry cool place for up to three months.
