Uses: Dino kale has lots of advantages over other varieties of kale, including a milder taste. The stems are thinner can be cooked with the rest of the leaf. In general, younger dino kale is best eaten in salads, and older dino kale should be cooked. It can be braised, baked, steamed, stir-fried, etc. Try it in a hearty winter soup with white beans or simply sautéed with garlic and ginger.
