Uses: Chop off the roots, give them a rinse, and slice into slivers or thin rounds. Scallions can be eaten raw or cooked and both the green and white parts are edible. Some people like to briefly cook the white and light green parts and use the darker greens for garnish. Give yours a taste and see how strong they are and then give them a try in green salads, pasta salads, tuna, vinaigrettes, eggs, fried rice and tacos. You can also grill them whole.
