Uses: Sweet potatoes are the darlings of the vegetable world. Sweet as candy and packed with nutrients, they also have the advantage of being quick and easy to prepare. You can grill them or cook them in the microwave or oven, but make sure you stab them a few times with a fork first to avoid steam build-up and exploding sweet potatoes. Try cutting them lengthwise and serving with butter, nutritional yeast, pickled vegetables, and/or top with a bitter green (such as arugula). Make sure to eat the nutrient-rich skins!
