Uses: While zucchini and cucumber might look similar, they are prepared differently, so make sure you know which vegetable you have. Zucchinis are a type of squash, and you can treat them as you would any other summer squash. For a quick meal, sauté zucchini and onion with (or without) other summer vegetables for a tasty mixture that you can add to pasta, couscous, or rice. If you want to wait for cooler weather to make zucchini bread or muffins, shred it and freeze it in an airtight freezer bag. It will clump together after it’s frozen, so measure out the amount you’ll need for your favorite recipe before you freeze it and label the bag.
